One of the country's best-known food groups is putting two Miami chefs in the spotlight next week. The James Beard Foundation's Taste America series stops in Wynwood on Wednesday, Oct. 28, for a multi-course dinner with wine pairings, according to the foundation's event page.
The hosts are Raheem Sealey and Monika Dominguez of Shiso Miami. The foundation named them to its 2026-2027 TasteTwenty, a group of chefs from 20 U.S. markets that it calls its picks of "ones to watch" in the industry. They are the Miami pair in that group. The foundation says it picks these chefs for their cooking and for work beyond the kitchen, such as backing local farms and investing in their teams. Their guest for the night is Sebastián Vargas, the chef behind Los Félix, Krüs Kitchen and Füm.
On the menu
The meal opens with a catch-of-the-day crudo with soursop aguachile, lime caviar, pickled pineapple and heirloom corn oil. The posted menu also includes a grass-fed beef short rib tamal with hazelnut-prune mole, tomatillo picadillo and nasturtium. The main course is smoked oxtail with an oxtail stew reduction and braised white beans. A vegan main course swaps in grilled oyster mushrooms with green chili sauce and shiso chimichurri. Wine comes with each course, and the foundation says dishes can change.
Edible South Florida described the shared menu as a blend of Japanese and Caribbean smokehouse cooking with Latin flavors.
Where Shiso stands now
Shiso began as an Asian smokehouse restaurant at 239 NW 28th St. In July 2026, the space grew into the Wynwood Event Center, an 11,000-square-foot indoor and outdoor venue for private and corporate events, Shiso's website says. Shiso no longer serves dinner every night. It now runs the venue's kitchen and catering and announces occasional brunches and dining events there.
Taste America is a national dinner series presented by American Express and Resy. It brings chefs and diners together to celebrate local independent restaurants in each city it visits.
